Vanilla cake with whipping cream and strawberries

Ingredients
  

For the cake

  • 125 gr Oat flour
  • 25 gr Cornstarch
  • 2 tsp Baking powder
  • 85 gr Butter (at room temperature)
  • 50-60 gr Erythritol
  • 2 Eggs (at room temperature)
  • 1 tsp Vanilla extract
  • 100 ml Milk (Cow milk, soy milk, almond milk...whichever you prefer)

For the topping

  • 200 ml Whipping cream
  • 1-2 tbps Erythritol
  • A handful Strawberries

Instructions
 

  • Preheat the oven to 180ÂșC.
  • In a bowl, mix the oat flour, cornstarch, and baking powder.
  • In a separate bowl, whip the butter at room temperature with the erythritol until creamy. Then add the eggs and the vanilla extract and mix everything well.
  • Add half of the flour mixture and mix, then add half of the milk and mix again, and do the same with the remaining half of both things, add them alternately and mix everything well.
  • Grease well the mold that you're going to use and pour the batter into the mold, bake for 40 minutes. (The baking time will vary depending on the oven and the mold you use).
  • Let it cool a bit before unmolding it, unmold it, and then let it cool completely before adding the topping.
  • For the topping, you just have to whip the whipping cream together with one or two tablespoons of erythritol, distribute the cream over the cake (once it's completely cold) and add some cut strawberries on top.
